Easy Eggplant Patties Recipe from Scratch

Today, let me share with you a tasty and original Pat-a-Cake recipe. Let me show you my easy recipe for brinjal cutlets. It’s eggless, vegetarian, easy to make, and very, very tasty. And in my opinion, much better than meat patties. Seriously.

Brinjal patties can be made in different shapes using moulds. I like to roll these in rice flour before shallow frying them. But if you want them to be crisper on the outside, you could roll them in breadcrumbs or semolina. They’re a little soft when taken off the pan. But they firm up on cooling and also become lighter in colour.

These flavourful brinjal cutlets or eggplant patties can be enjoyed with tomato sauce or any sauce of your choice, or else with chutney or mayonnaise.

Ingredients

4 long, slender brinjals 500g

2 tbsp + ½ tbsp oil

4 green chillies, finely chopped

2 medium-size onions, chopped

6 medium-size garlic cloves

1 ½ inch piece ginger, ground

½ tsp turmeric powder

½ tsp salt

1 tsp pepper powder

3 tbsp + 2 tbsp water

1 tsp garam masala

1 ½ tsp amchur powder (or 2 -3 tsp lime juice)

1 tsp chaat masala

1 ½ tsp powdered sugar

1 large boiled potato (150g)

¾ cup breadcrumbs (or 2 bread slices)

¼ cup chopped coriander

Rice flour (Or Semolina/Breadcrumbs)

Oil for shallow frying the cutlets

Makes 18 small cutlets or 12 larger ones.

 

Easy Eggplant Patties Recipe

Procedure

  1. Of the four brinjals, peel the skin off from two of them. Then slice and chop the four brinjals into tiny pieces.
  2. Heat 2 tbsp of oil in a pan on medium heat. Throw in the chopped green chillies and sauté this for a few seconds.
  3. Add the chopped onion and sauté this till it softens and just starts browning.
  4. Add the chopped brinjal and sauté this for 1-2 minutes. Then add 3 tbsp of water, cover the pan, and let the brinjal cook for around 5 minutes.
  5. Then, make a well in the centre, and add 1/2 tbsp oil. Add the ginger, garlic, and turmeric powder and toss this in the oil for a few seconds before mixing it with the other ingredients in the pan.
  6. Add the salt and pepper powder, and mix this with too into the brinjal mixture. Add 2 tbsp of water, reduce the heat to low, cover the pan, and let the brinjal cook for 5 more minutes.
  7. By now, the brinjal will be soft and fully cooked. Add the garam masala, amchur powder, chaat masala, and powdered sugar. Mix everything and let the brinjal mixture dry out some more.
  8. Next, add in the boiled and mashed potato and breadcrumbs and mix these well into the brinjal mixture. Finally, add in the chopped coriander and mix everything again.
  9. Then taste the cutlet mixture and adjust the seasonings if necessary. Let the mixture cool completely.
  10. Shape the patties into any shape of your choice and then roll them in rice flour. Instead of rice flour, you could roll them in breadcrumbs or semolina for a crisper texture on the outside.
  11. Shallow fry the cutlets on medium heat till they get browned on both sides.
