Procedure

  1. Make a watery batter with the rice flour and water.
  2. Mix in all the other ingredients except the oil.
  3. Then, rest the batter for 5 minutes.
  4. Add a little more water to the batter if necessary.
  5. Next, heat a non-stick pan or dosa tawa on medium high. Grease it with a few drops of oil.
  6. Stir the batter well and scatter around 2 ladles full (or a small bowl full) of it across the pan, starting from the sides of the pan and moving to the centre.
  7. Cover the pan and cook the dosa for a minute.
  8. Remove the lid. Drizzle a little oil on the dosa and around its edges. Cook the dosa for around 2 minutes more till the top dries up completely and it starts browning underneath.
  9. Then, flip the dosa and cook it for a few seconds on the other side.
  10. Flip the dosa over again and then fold it in half and take it off the pan.
  11. Before cooking the next dosa, wipe the pan clean, drizzle a little oil on it.
  12. Don’t pile up the dosas but fold each one before taking it off the pan.
  13. The dosas can be enjoyed with chutney, sambar, or any sauce of your choice.

Enjoy!
