Quick Vegetarian Quesadillas

Tasty breakfast quesadillas

Mexican quesadillas. These are one of those delicious dishes you could rustle up in minutes from leftovers or make them from scratch. This video will show you how you could make a crisp, tasty vegetarian quesadilla with the simplest of fillings.

To make quesadillas you would need tortillas, cheese, and any filling of your choice. But you could also replace tortillas with rotis or chapatis. However, if you want to learn how to make tortillas, check out my detailed, step-by-step video here.

Ingredients

4 tortillas

2 tomatoes

1 large onion

2 green chillies

4 tbsp chopped coriander

¼ tsp salt

½ tsp crushed pepper

1 ½ tbsp tomato sauce

Cheese spread / grated cheese

A few tsp oil

Makes two vegetarian quesadillas

Procedure

Filling:

  1. Deseed and finely chop two large tomatoes.
  2. Finely chop the onion, chillies, and coriander.
  3. Transfer all the ingredients to a bowl. To this, add the tomato sauce, salt, and freshly crushed pepper. Stir everything well.

This filling is enough for two quesadillas.

Making the quesadillas:

You’ll need two tortillas to make one Mexican quesadilla.

  1. Spread grated cheese or a generous layer of cheese spread on one tortilla.
  2. Transfer it to a griddle pre-heated on medium and drizzled with oil. Spread half of the filling over the layer of cheese on the tortilla.
  3. After half a minute turn the heat to low.
  4. Apply a layer of cheese spread to the other tortilla. (If you’re using grated cheese, sprinkle it over the top of the filling on the tortilla that’s on the griddle.)
  5. Upturn the second tortilla over the one with the filling. (If you’re using grated cheese, place the second tortilla over the one with the filling on the griddle.)
  6. Press along the edges of the upper tortilla. The cheese will melt and hold both the tortillas together. But if there are gaps between the two along the edges, more of the cheese could seep through. (A little cheese escaping on to the hot griddle is inevitable.) The lower tortilla could take around 2 minutes to get crisp slowly on the underside.
  7. Once the lower tortilla is crisp enough, drizzle some oil on the upper tortilla, and carefully flip the quesadilla. Then raise the heat to medium and after half a minute reduce it to low so the second tortilla too can become crisp slowly.
  8. Transfer the fried quesadilla to a cutting board. Using a pizza cutter or a sharp knife, cut it into quarters.
