Ingredients
300g chicken breast
8-9 cloves garlic (1 tbsp crushed)
1 tsp chilli powder
½ tsp pepper
½ tsp salt
150g (1 ½ cups) mini penne pasta /any pasta
2 litres (8 cups) water
2 tsp salt
2 tbsp olive oil /cooking oil
1 tbsp butter + 1 tbsp
2 green chillies, finely chopped
1 medium size onion, finely chopped
1 tbsp whole wheat flour/maida
½ cup milk
½ cup milk cream
⅓ cup grated cheese (cheddar/parmesan)
1 chicken bouillon cube / veg buillon
1 cup pasta water + more if necessary
1 tsp oregano
1 tbsp tomato sauce (optional)
2 tsp chopped mint
Procedure
- Boil the pasta till al dente (around 9 to 10 minutes) with 2 litres water and 2 tsp salt. Don’t drain away the water.
- Chop the chicken into 1.5-inch pieces. Marinate with salt, pepper, chilli powder, and ½ tbsp garlic.
- Heat 2 tbsp oil + 1 tbsp butter in a pan. Add the marinated chicken and saute till done. Don’t overcook the chicken. Remove the chicken to a plate.
- To the same pan, add 1tbsp butter. Throw in the chopped green chillies and then the chopped onion. Saute till the onions are soft and just starting to brown.
- Add the wheat flour and saute for 1 minute. Add the remaining crushed garlic Add the milk and milk cream and saute till there are no more lumps in the sauce. Add in the cheese and let it melt. Add the oregano. Add the soup cube and the pasta water. If the sauce is too thick, add some more of the pasta water till you get a medium thick consistency.
- Add in 1 tbsp tomato sauce (optional). Check the pasta sauce for salt. Then add in the chicken and stir well.
- Finally stir in the pasta.
- Top with some grated cheese and chopped mint leaves or chopped coriander.
