Easy Chicken Mayonnaise Cold Sandwich

Chicken Mayonnaise Grilled Sandwich

Delicious chicken mayonnaise cold sandwiches can be put together in minutes once you’ve prepared the chicken and vegetable filling. These chicken sandwiches can also be grilled. And you could enjoy them for breakfast, lunch, or dinner or even as a tasty snack.

Chicken mayo sandwiches are soft and have a rich, creamy filling, and they’re also loaded with veggies. And so, they’re not just easy to make and super-tasty, they’re nutritious too.

Ingredients

200g chicken breast

½ tsp salt

½ tsp + ½ tsp ground pepper

½ tsp crushed ginger

½ tsp crushed garlic

2 tsp oil

3 green chillies, finely chopped

1 small onion, chopped

¼ tsp salt

3 tbsp grated carrot

3 tbsp finely chopped capsicum

3 tbsp tomato, deseeded, chopped

2 tbsp chopped coriander

1 tbsp tomato sauce

1 tbsp red chilli sauce

¼ tsp garam masala

4 ½ tbsp mayonnaise

Extra mayonnaise for spreading on bread slices

 

Chicken Mayonnaise Grilled Sandwich

Procedure

  1. Wash the chicken, and then add it to a pot along with ½ cup of water. Add the salt, pepper powder, crushed ginger, and crushed garlic. Cover and cook this on medium-low heat, flipping the chicken after 5-6 minutes. Cook the chicken for around 12 – 15 minutes or till it is well cooked. Take off the lid and continue cooking the chicken till all the water evaporates.
  2. Remove the chicken to a plate and let it cool a little. Cut it into pieces and shred it using two forks or a mixer-grinder.
  3. Heat the oil and sauté the green chilli and onions for a minute or two. Add the chicken and sauté this for a couple of minutes. Then remove the chicken to a bowl and let it cool completely.
  4. To the cooled chicken mix, add the grated carrot, chopped capsicum, deseeded and chopped tomato, chopped coriander, tomato sauce, red chilli sauce, garam masala, and ground pepper. Finally, add in the mayonnaise and mix everything well.
  5. Cut off the edges of the bread slices if you want. Then spread some mayonnaise on each bread slice and make chicken mayo sandwiches with the chicken filling.
  6. You could also apply a little butter to the outside of the chicken sandwiches and grill them on a griddle or in a sandwich maker or oven.
