5-Minute Burnt Garlic Rice Recipe

How to Make Garlic Rice at Home
Have you got leftover rice? Then here’s what you can make with it in 5 minutes! Transform it into tasty, 5-minute burnt garlic rice! It’s a very popular dish in Japan and Thailand, but I’ll show you how to prepare it in minutes in your own kitchen.
The star ingredient that adds flavour to this rice dish is garlic. But did you know garlic can reduce blood pressure and cholesterol, and can boost your immunity? So, if you’re looking for flavour and health benefits, tasty burnt garlic rice is an excellent choice.

Ingredients
1 ½ tbsp oil
⅓ cup or 20 cloves garlic (5 sliced, 15 chopped)
1 tbsp ghee / butter
1 green chilli finely chopped
½ cup chopped spring onion whites
¼ cup chopped carrot
1 tsp chilli flakes
1 tbsp soya sauce
1 tsp red chilli sauce
3 ½ cups leftover cooked rice
(OR rice cooked two hours earlier, then cooled completely.)
½ tsp salt
½ tsp ground pepper
1 crushed soup cube – vegetable/chicken (optional)
½ cup spring onion greens
2 tbsp chopped coriander
Salt to taste
1 tbsp apple cider vinegar / 1 tbsp lime juice
Procedure
- Heat the oil. Fry the sliced garlic on low heat till it turns light brown. Remove to a paper napkin.
- To the same oil, add the chopped garlic and ghee and fry the garlic till brown.
- Add in the chopped green chilli. Sauté for a few seconds. Add the chopped onion whites. Sauté till the onion softens. Add the chopped carrot and sauté for around a minute.
- Stir in the chilli flakes, soya sauce, and red chilli sauce, and then add the rice in three parts, mixing everything carefully each time.
- Add the salt, ground pepper, crushed soup cube. Mix carefully.
- Retain 1 tbsp of the spring onion greens and mix the rest into the rice. Mix in the chopped coriander. Turn off the heat.
- Taste for salt and adjust the taste if necessary.
- Add in apple cider vinegar or lime juice.
- Garnish with the crisp garlic slices and the retained greens.
- Serve with any accompaniment of your choice. Or have it the Indian way with pickle and papad.
