Vegetable Soup Recipe Indian Style

What could be better on a cold winter’s day than enjoying a large bowl of steaming hot, nourishing vegetable soup? This comforting and healthy soup tastes amazing and can be easily made with a mix of available vegetables. It’s the perfect recipe for weight loss as well. Believe me, everyone at home will love it.
You could change the mix of vegetables according to your preference or even vary the quantity of the different vegetables. It’s such an easy recipe. In fact, it’s beyond easy. So do give it a shot.

Ingredients

1 tbsp oil
3 tbsp butter
2 bay leaves
2 medium size onions, finely chopped
3 to 4 spring onions, chopped
4 large cloves garlic, finely chopped
2 inches ginger, finely chopped
150g grated carrot
75g green beans
1 each green, red, and yellow, capsicums
½ cup green peas
1 large potato, 200g
3 large tomatoes, 400g
2 tbsp tender coriander stalks, chopped
½ tsp + ½ tsp ground pepper
1 tsp oregano
1 ½ litre water
A small bunch of coriander
A small bunch of kale or spinach
1 tbsp corn starch + ¼ cup water
2 soup / bouillon cubes
2 tbsp lemon juice
1 tsp + ½ tsp salt or salt to taste
Toasted garlic bread
A few slices bread
Garlic Butter (½ tsp crushed garlic whipped with ½ cup salted butter)

 

Vegetable Soup Recipe Indian Style

Procedure

1. To make this super healthy vegetable soup we’ll use an interesting mix of veggies – onions, spring onions, carrots, green beans, green peas, capsicum (green, red, and yellow), potato, tomato, coriander leaves, and kale. In place of kale, you could use spinach.
2. Grate the carrot. Finely chop the onions, spring onions, green beans, and capsicum. and chop the potato into small cubes. Puree the tomatoes. Chop the coriander leaves (we’ll also use the tender stalks), and the kale.
3. Finely chop the garlic and ginger.
4. In a large pot, heat the oil and butter. Add in the grated carrot, and the chopped onions and spring onions. Sauté these on medium heat for around 3 minutes.
5. Add in the green beans and sauté these as well. Add in the green peas. Next, add in the chopped potatoes, followed by the chopped green, red, and yellow capsicum. Continue sauteing the vegetables.
6. Stir in the chopped garlic and ginger. Sauté this for a minute and then add in 2 cups of water. Add in the chopped coriander stems. Then cover the pot and let the vegetables cook on medium low heat for 10 minutes.
7. After the veggies have cooked, stir in the tomato puree, and add in 1 litre of water, followed by 2 soup or bouillon cubes. Use any brand of soup cubes that you like. Crumble the cubes before adding them.
8. Add in 1 tsp of oregano, ½ tsp of ground pepper, and 1 tsp of salt. Stir the soup and increase the heat to medium. Once it comes to a boil lower the heat to medium-low and let the soup boil for around 5 – 6 minutes.
9. Taste the soup and see if it needs more salt or pepper. It could do with ½ a tsp more of salt and around ½ a tsp of ground pepper.
10. Finally, add in the chopped kale and coriander leaves and 2 tbsp of lemon or lime juice. Let the soup boil for a few minutes, The kale or spinach will wilt and cook in just 5 minutes.
11. After that, make a puree with 1 tbsp of cornflour and a ¼ cup of water and stir this into the soup. Let the soup cook on medium-low heat for 2 more minutes to give the cornflour time to get cooked.
12. Our delicious winter vegetable soup is now ready to enjoy.
13. Let’s apply some garlic butter to a few slices of bread and toast them to have them along with the soup.

Quick Garlic Butter Recipe: To prepare this, whip up ½ tsp of crushed garlic with ½ cup of salted butter.
