How to Make Chocolate Walnut Rocks
This is a popular Goan Christmas sweet and mine is an easy, no fail recipe. I’ll show you how to make this delicious, perfect treat for your Christmas festivities with ease! With just a few simple ingredients—condensed milk, sugar, milk, cocoa powder, and walnuts—you could create these easy, no-fail bites that are irresistibly crunchy and super tasty within just 30 minutes. The smooth, milky chocolate flavour pairs perfectly with the walnuts, making every bite a festive delight. Whether you’re baking for a holiday gathering or just want a quick, tasty gift idea, these chocolate walnut treats are sure to impress!

Ingredients
150g walnuts, chopped
6 tbsp cocoa powder
6 tbsp water
6 tbsp milk
150g (½ cup + 3 tbsp) granulated sugar
¾ tin condensed milk (300g / 225ml)
½ tsp vanilla essence
2 tsp butter
OR
(1 tin condensed milk recipe)
200g walnuts
8 tbsp cocoa powder
8 tbsp water
8 tbsp milk
200g ( ¾ cup + 3 tbsp) granulated sugar
1 tin condensed milk (400g / 300ml)
¾ tsp vanilla extract
1 tbsp butter
Procedure
1. Cover a chopping board or tray with parchment paper. Brush a thin layer of melted ghee or butter on the parchment paper.
- In a non-stick pan, lightly toast the walnuts. Cool and chop them roughly.
- Mix the cocoa powder with a little water at a time, till it forms a smooth paste.
- Heat the milk on a medium flame. Add in the sugar and stir the mix till the sugar dissolves.
- Reduce the heat to low and pour in the condensed milk. From this stage, keep stirring the mixture continuously on low heat taking care to see it doesn’t burn.
- After 15 minutes, it will thicken considerably. Stir in the cocoa slurry and continue stirring the mixture for 10 more minutes.
- Add a little of the mixture into a small bowl of room temperature water. If it forms a smooth ball, it indicates you just have to cook the mixture for another 5 -6 minutes.
- Add in the chopped walnuts, vanilla extract, and the butter. Continue stirring the mixture till it begins to leave the sides of the pan. Turn off the heat.
- Add spoonfuls of the mixture to the parchment paper-covered chopping board / parchment paper lined tray. After around three hours, cover the chocolate walnut rocks with a thin kitchen napkin and leave them overnight to dry and firm up some more.
- Wrap each walnut rock in chocolate foil or cellophane paper and store them in an airtight jar or container. Or line an airtight container with parchment paper and transfer the chocolate walnut rocks to it. They can be stored in this container at room temperature for around 15 days.
