Ingredients
9 lightly toasted bread slices, cubed
1 tbsp ghee
10 cashew nuts split
2 tbsp oil
½ tsp mustard seeds
A few curry leaves
1 green chilli, finely chopped
1 ½ inch piece ginger, crushed
¼ tsp turmeric powder
½ tsp chilli powder
½ tsp coriander powder
¼ tsp ground pepper
2 med size onions, chopped (into squares)
1 med size tomato, chopped (into squares)
½ tsp cumin seeds
2 tbsp tomato sauce
3 tbsp water
½ tsp salt
2 tsp lemon juice
6 tbsp chopped coriander
Procedure
- Lightly toast the bread slices and then cut them into medium-size cubes.
- Then, in a non-stick pan, lightly toss the cashew nuts in the ghee till they’re golden brown. Remove them to a small bowl
- To the same pan, add the oil. When it’s hot enough add the mustard seeds and let them splutter. Then throw in a few curry leaves and the chopped green chilli. Sauté this for a few seconds and then add the crushed ginger. Sauté everything for a few seconds more.
- After this, we’ll add some dry spices. Add the turmeric powder, chilli powder, and coriander powder. If you don’t have coriander powder, add a ¼ tsp garam masala, or skip this ingredient altogether. Then add the ground pepper. Toss all the spices in the oil for a few seconds.
- Next, add in the chopped onions. The onion should be chopped into medium-size, square-shaped pieces. Sauté the onions till they soften.
- Add in the tomato chopped into medium-size pieces. Sauté everything till the tomato is cooked.
- Then add in the cumin seeds. Toss the mixture again for a few seconds and add the tomato sauce, water, salt, and lime juice. Mix everything well.
- Add in the bread cubes, and toss them well with the masala ingredients.
- Finally, add the fried cashew nuts and the chopped coriander, and mix everything again well. The bread upma is now ready.
Enjoy!
