Ingredients
White sandwich bread, a few slices
A little butter
Orange Filling
1 ½ medium size carrots, chopped
¼ cup chopped onion
2 tsp oil
2 tbsp mayonnaise
¼ tsp salt
¼ tsp ground pepper
Green Filling
½ cup coriander-mint chutney
1 tbsp mayo / cream cheese
Red Filling
2 small boiled beetroots
1 small green chilli, chopped
1 ½ tbsp mayonnaise
¼ tsp salt
¼ tsp ground pepper
Procedure
Orange filling
Saute the carrot and onion in the oil for around 3 to 4 minutes on medium-low heat or till the carrots have cooked. Cool the mix and then grind it to a smooth paste in a mixer-grinder. Stir in the mayonnaise, salt, and pepper.
Green filling
Mix both the ingredients.
Red filling
Peel and chop the beetroots. Grind the chopped pieces to a smooth paste in a mixer-grinder, along with the green chilli, mayonnaise, salt, and pepper.
Assembling the club / ribbon sandwiches
- Apply some butter on two bread slices. Spread the red filling on one slice and then place the second one on this slice with the buttered side down.
- After that, apply butter to the top of the second slice, and then spread the green filling on it.
- Apply butter to one side of the third slice and then place it over the other two slices with the buttered side down.
- Next, apply butter to the top of the third slice and then spread the orange filling on it.
- Then, apply butter to one side of the fourth slice and then place it over the first three slices with the buttered side down.
- Lightly press the triple decker sandwich down to see that all the bread slices are well sandwiched together.
- That done, cut off all the four edges of the club sandwich with a sharp knife.
- The sandwich can be sliced in two ways: a) Make two diagonal cuts and divide each sandwich into 4 smaller triangular ones. b) Make 2 straight and parallel cuts across the sandwich, thus dividing it into three, rectangular, ribbon sandwiches.
- Arrange the sandwiches on a tray or plate. Cover them with a damp towel or foil or parchment paper and refrigerate them for around an hour and then serve them cold.
Enjoy!
