Beer Bread No Yeast
This recipe for quick beer bread with cheese is one of those easy-peasy bread recipes. No yeast, no kneading, no waiting for the dough to rise….. just mix everything, put it in the oven, and bake it. Baking bread couldn’t be any easier. This bread has a nice crust and is soft inside. The texture is almost like that of a cake.
This beer bread recipe is different from my other bread recipes like the one for soft burger buns or eggless ladi pav where yeast is used as a leavening agent.
And if you’re wondering if all that beer in the batter will make you tipsy, nothing like that will happen. The beer just adds to the flavour and the aroma of the bread. Beer bread with cheese is best enjoyed fresh. So if you want to have it the next day, I suggest you warm up the bread slices first. You could dunk the beer bread in soup, have it with butter, or enjoy it as it is, by itself.

Ingredients
3 cups (375g) maida (all-purpose flour)
1 ½ tbsp baking powder
5 – 6 tbsp granulated sugar, coarsely ground
(OR 6 tbsp fine castor sugar)
1 ¼ tsp salt
3 tbsp chopped coriander / chives + thyme
¼ cup (4tbsp) + 1 tsp melted butter
90g (¾ cup) cheddar cheese, grated
330ml approx. (11 ounces) pilsner / lager beer
Procedure
- Sift the flour and baking powder. Mix in the sugar, salt, and mixed herbs.
- Stir in 2 tbsp butter (half of the butter) and the cheese.
- Stir in enough beer till you have a sticky dough.
- Transfer it to a greased and parchment paper lined loaf pan (8.5″ x 4.5″ or slightly larger).
- Tap the pan and smoothen the top of the dough.
- Pour the remaining 2 tbsp butter over the dough.
- Bake at 350 F (170 C – 175 C) for around 45 to 50 minutes.
- While it is still hot, brush the top of the bread with around 1 tsp melted butter.
