One Pan Chorizo Rice in 30 minutes

Goan Choris Pulav Recipe

Do you want to cook a simple but delicious dish that everyone at home will enjoy? Then this is it. Let’s make a classic Goan dish – Choris Pulav or Chorizo rice. It’s a one-pan wonder that comes together in one pan and can be made in under 30 minutes.

Chorizo Rice has the right balance of flavours and colours and the taste is incredible. You’ll just have to make it at home to see I’m not exaggerating. The recipe has very few steps and the pulav will be ready to enjoy in minutes.

The star ingredient here is flavourful Goan sausages. But if you don’t have Goan sausages or chorizo, you could use any other variety of sausages, including chicken sausages.

Ingredients

1 ½ cups (300g) rice (preferably basmati)

100 g (24 units) Goa sausages

2 tbsp ghee

1 tbsp oil

8 cloves

2 cinnamon sticks (each 1½ ” long)

12 peppercorns

4 green cardamoms

1 black cardamom

¼ tsp turmeric powder

2 medium-size onions chopped

2 medium-size tomatoes chopped

2 bouillon/soup cubes (optional)

2 tsp lime juice

Salt to taste

Chopped coriander (garnish)

Procedure

  1. Wash the basmati rice well and then soak it in plenty of water for around 15-20 minutes.
  2. In the meanwhile, remove the casing from the chorizo/sausages and keep the meat aside.
  3. Heat the ghee and oil in a pressure pan on a medium flame. Throw in the cloves, cinnamon sticks, pepper corns, and cracked open green and black cardamom.
  4. Sauté these for a few seconds, and then add the chopped onion. Sauté it till it starts turning brown.
  5. Stir in the turmeric powder and then add the chopped tomato. Sauté it till it softens.
  6. Add the sausage meat and sauté this for a minute. Add the water, the bouillon cubes, and the lime juice. Bring the mix to a boil and then add salt to taste.
  7. Add the rice and carefully stir everything.
  8. Put the lid of the pressure pan on and turn the heat to high. Once full pressure is reached, lower the heat and let the pulav cook for 5 minutes. Turn off the heat.
  9. After the pressure in the pressure pan reduces, remove the lid and fluff up the pulav with a fork.
