Besan Burfi With Just 4 Ingredients

Healthy Besan Barfi Recipe

Besan Burfi is one of those delicious Indian sweets or mithais that don’t overwhelm you with their sweetness or come across as too rich or oily. It has a melt-in-the-mouth consistency and is quick and easy to make. Only, you have to keep some important tips in mind to make sure you get it right.

My besan burfi recipe has just 4 main ingredients, not three, as is usually the case. That’s because, I’m going to make a healthy version. This mithai will stay good at room temperature for around 2 weeks. But take it from me, it won’t last that long. It’s that tasty.

Ingredients

200g (2 cups) besan (chickpea flour)

110g (½ cup) pure ghee

55g (¼ cup) refined oil

250g (1 cup + 3 tbsp) granulated sugar

 

1 tsp ground cardamom

⅛ tsp turmeric powder

¼ cup toasted and crushed mixed nuts

1 – 1 ½ tbsp sliced nuts

 

Healthy Besan Barfi Recipe

Procedure

  1. Sift the besan into a kadai / pan.
  2. Add the ghee and oil to the besan. Mix everything and then roast the besan on medium-low heat (for around 18 minutes) till it just begins changing colour and gives off the aroma of roasted besan.
  3. Mix in the turmeric powder, and then take the kadai off the heat.
  4. In a vessel / pan, add the sugar to ½ cup water. Stir and bring this solution to a boil on medium heat. Reduce the heat to low, stir in the ground cardamom, and continue boiling the sugar solution for around 4 – 5 minutes till it just begins to form a single-strand syrup. Turn off the heat.
  5. Stir the hot syrup into the roasted besan till everything is well-mixed. Keep stirring the mixture for another 3 – 4 minutes till it begins to thicken. Add in the crushed nuts. Stir the mixture well.
  6. Pour the burfi mixture into a greased tray. Level the top and sprinkle the sliced nuts on the slab of burfi.
  7. Let it cool for around 20-30 minutes till it begins to set. Cut the slab into squares and store these in an airtight container after they cool completely.
