Ingredients
1¼ cup maida (160g)
1¼ tsp baking powder
3 eggs
¾ cup + 2 tbsp (190g) sugar
1 tsp vanilla extract
¼ cup oil (55g)
½ cup + 2 tbsp (150ml) full cream milk
3 ½ tbsp salted butter (50g)
Bake the cake at 180 C for 30 – 35 minutes
Bake in a 7″x 7″ square pan or 8″ round pan
Procedure
- Prepare a 7 x 7-inch square baking pan. Grease and dust it with maida and line the bottom with parchment paper.
- Sift the flour and the baking powder.
- Whisk the eggs and the sugar well, adding the sugar in 3 parts. Add the vanilla extract and oil and whisk again.
- Gently mix in the flour mixture in two parts.
- Heat the milk and the butter. Bring it to a boil and immediately turn off the heat. Wait for 2 minutes.
- Whisk the hot milk mixture into the earlier mix. The batter should now have a pouring consistency.
- Pour it into a prepared pan. Tap the pan to release gas bubbles. Move a skewer through the batter to remove some more gas bubbles from the batter.
- Bake at 180 C (360 F) for around 30-35 minutes or till a skewer or toothpick inserted into it comes out clean.
