Quick and Delicious Goan Banana Filoz

Wholesome Banana Pancakes with Wheat Flour

Today, let me show you how I make Goan banana filoz – banana pancakes with wheat flour. This is an old and traditional recipe. But it is also a very flexible and easy one. You can’t go wrong with it. You could make these banana pancakes with wheat flour using modifications of your own. For example, you could make it with or without eggs. Or make it with cane jaggery, palm jaggery, or a mix of both. You could also make Goan filoz with sugar. And you could flavour them with ground cardamom or vanilla extract.

Filoz are tasty tea-time snacks and so quick and easy to prepare. I hope those of you who had forgotten about this delicious traditional Goan snack will now start making it again.

Another tasty Goan snack made with bananas are Goan banana buns. Also called Goan sweet buns, they’re scrumptious and they don’t need any baking.

Ingredients

2 medium-size bananas

1 cup wheat flour

½ cup grated jaggery (105g)

¼ cup grated fresh coconut

½ tsp salt

1 tsp ground cardamom

(OR ½ tsp vanilla extract)

1 egg (optional)

¼ cup milk

½ cup water

Ghee or oil for frying the filoz

(Makes 9 small filoz.)

Banana Pancakes with Wheat Flour

Procedure

  1. Mix the grated jaggery and the grated coconut, till all the lumps of jaggery are smoothened.
  2. Peel and mash the bananas and add this to the jaggery mix.
  3. Mix in the salt, cardamom, and the egg. Whisk well.
  4. Add the milk.
  5. Add the flour in 2 parts till well mixed into the batter.
  6. Add the water a little at a time till you have a smooth and slightly loose batter.
  7. Heat 2 tsp of pure ghee in a pan and then ladle out 3 small pancakes.
  8. Fry the pancakes for around 1 ½ to 2 minutes on each side on medium heat till they develop brown patches.
  9. Remove to a plate lined with a paper towel.
  10. Fry all 9 filoz.
