Luscious, Quick Mango Kheer

Easy Mango Kheer Recipe

Let’s make another delicious mango dessert. Mango kheer. It’s luscious, it’s rich, and very, very tasty. And like the other two I recently posted, Mango Mug Cake, and Mango Yogurt Ice Cream, this mango dessert too is eggless and easy to make. You’ll be surprised how easy. It’s one of those fantastic recipes you can’t go wrong with.

To make mango kheer you’ll need just a handful of ingredients. This recipe of mine gives the kheer a somewhat rabdi-like texture. Do give it a shot before the mango season is behind us. You could enjoy it either hot or chilled. Honestly, if you skip making this fabulous dessert, you’ll be missing out on tasting something super-delicious.

Ingredients

½ cup (120g) mango purée

2 ½ cup (600ml) full cream milk

5 tbsp vermicelli

2 tsp pure ghee

¼ cup sugar

2 tbsp milk powder

2 tbsp milk cream

1 tsp ground cardamom

A pinch of salt

3 tbsp chopped cashew nuts

3 tbsp chopped pistachios

3 tbsp chopped mango pieces

 

Easy mango kheer recipe

Procedure

  1. Heat the ghee. Then sauté the vermicelli in this till it just starts browning.
  2. Add the milk and stir everything. Bring the milk to a boil on medium heat.
  3. After that, reduce the heat and cook the vermicelli on low heat for around 15 minutes. (It will get cooked in 10 minutes, but continue heating the mix.)
  4. Stir in the sugar and a pinch of salt.
  5. After the sugar dissolves, add the milk powder and the milk cream. Stir everything well till there are no lumps of milk powder in the mix.
  6. Nest, stir in the ground cardamom, and part of the chopped cashew nuts and pistachios, reserving a little of each for the final garnish.
  7. Continue boiling the kheer for 1 more minute and then turn off the heat. Let the kheer cool to room temperature.
  8. Finally, mix in the mango puree and stir till it is well incorporated in the kheer mix.
  9. Garnish the kheer with chopped cashew nuts and chopped pistachios and also some finely chopped mango pieces if you want.
  10. The kheer can be had hot or chilled.
