Ingredients
For the Goan Coconut Chutney Recipe
1 cup coriander leaves
¼ cup pudina (mint) leaves (optional)
¾ cup grated coconut
5 medium spicy green chillies (3″ length)
3 cloves garlic
½ tsp cumin seeds
1 small ball of tamarind (3/4 ” diameter)
2 tbsp sugar
1 tsp salt
½ medium-size onion or 1 small onion
1 tsp oil
(Makes around ¾ cup of chutney)

Procedure
For making the Goan Coconut Chutney
- Roast the sliced onion in 1 tsp of oil over medium heat till it just begins to brown.
- Wash the coriander and mint leaves well, rinsing them at least thrice with plenty of water to get rid of any mud sticking to them. Roughly chop the garlic cloves, green chillies, and coriander and mint leaves.
- Transfer all the ingredients to a grinder jar and grind for a few minutes with a little water (I used around 7 tbsp) till you get a smooth spreadable chutney. Adjust the taste by adding more salt, sugar, or more chopped green chillies as needed.
- Transfer the chutney to a bowl or a container with a lid. It will stay good in the fridge for around 5 days and in the freezer for months.
This recipe will make ¾ cup chutney, enough for making 20 to 25 sandwiches depending on the size of the bread slices.

For making the Goan Coconut Chutney Sandwiches
- Liberally butter two slices of bread. Spread a thick layer of chutney on one of the slices and upturn the other one on top of it.
- Trim the four sides of the sandwiched slices. Make a sharp diagonal cut across it to make two sandwiches.
- After you make a few sandwiches, arrange them on a tray, cover the tray with clingfilm or parchment paper and keep the sandwiches in the fridge for an hour or two before serving them.
Goan chutney sandwiches can be had at room temperature or as cold sandwiches.
