Let’s learn how to make corn korma, a flavourful and aromatic Indian dish. Let’s check out a corn korma recipe, restaurant style. With sweet corn available all year round in our part of the world, this dish can be made any time you’re in the mood to enjoy it.

Corn korma is made differently in different parts of India. In the north they make a rich gravy using cashew nuts and poppy seeds. In the southern states, they make a tasty coconut-based gravy. But now, let me show you how to make corn korma the way I make it. It’s more of a corn korma recipe restaurant style, and is fragrant and tasty. As a variation, you could lightly crush the sweet corn kernels after boiling them.

Ingredients

2 cups corn kernels, boiled

2 medium-size onions

2 medium-size tomatoes

3 – 4 green chillies

1½ tbsp chopped ginger

3 large cloves garlic

¾ cup grated fresh coconut

2 tbsp cashew nuts (optional)

½ tsp turmeric powder

1½ tsp garam masala

2 bay leaves

6 cloves

6 peppercorns

1¼” piece cinnamon

1½ tsp cumin seeds

1 tsp sugar

2½ tbsp milk cream

1 tsp lime juice

3 tbsp oil

Salt to taste

Chopped coriander

 

Corn Korma recipe restaurant style

Procedure

  1. Set the corn to boil with around ¾ cup of water. Boil for 3 – 4 minutes.
  2. In the meanwhile, grind the coconut with the ginger, garlic, turmeric, garam masala, and cashew nuts (if you’re adding them) to a fine paste.
  3. Sauté the chopped green chillies. Add the onions and cook them till they just start to brown. Then throw in the tomatoes and continue sautéing them till they’re soft.
  4. That done, add the coconut paste and sauté for a minute.
  5. Next, add the boiled kernels along with any remaining water in the pot. Add ½ cup water and cook on low flame for 3-4minutes.
  6. Stir in the milk cream, sugar and salt. Then add water to adjust consistency and taste the gravy. Adjust the taste if necessary.
  7. Finally, add the lime juice, stir, and turn off the heat. Garnish with chopped coriander.
