Gluten-free Oat Uttapams, Oat Dosas
Recipe for Instant Oat Dosas and Oat Uttapams

As mentioned at the start, both these recipes are gluten-free, so you won’t find rava or any form of wheat in the ingredients. But you could make your own toppings, vegetarian or even non-vegetarian and thus vary the taste of your instant oat dosas and oat uttapams.
Ingredients
Instant Oat Uttapams
¾ cup oats (rolled or quick-cooking)
¼ cup rice flour
¼ cup yogurt
1 tsp crushed ginger
1 tsp ground cumin
½ tsp pepper powder
¾ tsp salt
1 tsp green chilli finely chopped
1 tsp lime juice
½ tsp baking soda (optional)
3 tbsp grated carrot
3 tbsp finely cut capsicum
3 tbsp finely cut tomato
3 tbsp chopped coriander
3 tbsp finely cut onion
A little oil
Instant Oat Dosas
¼ cup oats (rolled or quick-cooking)
2 tbsp rice flour
1 tbsp yogurt
½ tsp crushed ginger
½ tsp ground cumin
½ tsp finely cut green chilli
⅓ tsp salt
¼ tsp pepper powder
A little oil
Procedure
Instant Oat Uttapams
- Mix the oat flour, yogurt, and 1 cup of water. Cover and set aside for at least 15 minutes.
- Mix in around 2 tbsp of water, the rice flour, salt, pepper, crushed ginger, ground cumin, chopped green chilli, lime juice, and finally, the baking soda.
- Mix all the chopped veggies to prepare the topping.
- Spread a few drops of oil on a heated griddle or non-stick pan with the heat on medium.
- Add two ladles of batter to the hot pan. Spread it a little. Reduce the heat to medium-low.
- Spread some of the topping on the batter and press it down lightly with the back of a spatula.
- Cover the pan and let the oat uttapam cook for a couple of minutes.
- Drizzle a little oil around the uttapam and on top of it. Flip the uttapam and cook the other side for around a minute.
- Flip it again and remove the instant oat uttapam to a plate. Serve it with coriander chutney or tomato ketchup.

Instant Oat Dosas
- Mix the oat flour with the yogurt and approx. ¼ cup water. Cover and keep aside for minimum 15 minutes.
- Mix in ¼ cup of water and the rice flour and the other ingredients except the oil.
- Next, add an additional ¼ cup of water or a little more to thin the batter to a loose flowing consistency.
- Spread a few drops of oil on a heated griddle or non-stick pan with the heat on medium.
- Pour 2-3 ladles of the batter in the centre of the hot pan. Tilt the pan to spread the batter. Or pour the batter and spread it a little with the back of the ladle, moving it in a circular motion. Reduce the heat to medium-low and let the oat dosa cook till the under surface is medium brown in colour.
- Flip the dosa and cook the other side for a few seconds.
- Flip the instant oat dosa again and remove it to a plate. Serve with coriander chutney.
