Goan-style Mushroom Chilli Fry

Lip-smacking Mushroom Chilli Fry

Goan chilli fry dishes are lip-smacking good even though they are not overloaded with spices. The tasty mushroom chilli fry is one of them. Another thing that’s great about them is that they’re so quick to make. In the video, I explain how versatile the chilli fry is and how it could be adapted by replacing the main ingredient of mushrooms with other vegetarian or non-vegetarian ingredients. For instance, you could make prawn or shrimp chilli fry, choris or chouriço chilli fry (chorizo chilli fry) , sweet corn chilli fry, etc. So do check it out. It would be worth giving it a shot, and then trying out the other variations.

Ingredients

For 150g button mushrooms:                                  For 200g button mushrooms:

1 cup thickly sliced onions (Approx.2 onions)      1 ¼ cup sliced onions

1 medium-size potato                                                 1 slightly larger potato

2 green chillies                                                             3 green chillies

6 medium-size cloves of garlic                                 8 medium-size cloves of garlic

½ tsp chilli powder                                                    ¾ tsp chilli powder

½ tsp salt (or to taste)                                               ½ to ¾ tsp salt (or to taste)

1 tsp lime juice                                                             1 ½ tsp lime juice

3 tbsp oil                                                                      4 tbsp oil

Procedure

  1. Rinse the button mushrooms (150g) in water two or three times, pat them dry and slice them.
  2. Slit the green chillies lengthwise into two or 4 pieces each.
  3. Peel and finely chop the garlic cloves.
  4. Peel the potato and slice it thinly. Stir fry and cook these in 1½ tbsp oil. Transfer the fried potato slices to a plate.
  5. Add another tablespoon of oil to the same pan and saute the chopped chillies in it. Add the chopped onions. Stir fry these for a minute or two and then throw in the chopped garlic.
  6. Within half a minute, transfer the chopped mushrooms to the pan and cook these for around 3 to 4 minutes, stirring continuously.
  7. Add the potatoes to the rest of the ingredients. Stir well and mix in the salt, chilli powder, and the juice of half a sour lime.
  8. Finally, throw in the chopped coriander, stir everything for a few seconds and turn off the heat. Transfer the chilli fry to a serving dish.
