Quick Breakfast Burritos

Tasty Mexican Burritos

If you have tortillas, chapatis, or rotis on hand, Mexican burritos could be a super-quick breakfast dish to prepare even when you’re rushed for time. Here are three tasty vegetarian burrito fillings you could prepare with the simplest of ingredients.

But you could also use any leftover vegetable or a meat dish as a filling if it isn’t too wet or doesn’t have too much of gravy. And if you want to make these with homemade tortillas, here’s my easy recipe for flavourful and healthier tortillas.

Ingredients

3 tortillas

(You could also use chapatis or rotis. But tortillas would give these a much better texture.)

Leftover cooked beans filling

3 tbsp leftover chawli (black-eyed beans) usal (savoury beans dish)

(OR use plain boiled beans/rajma/sweet corn and add in some

chopped garlic and a little more of the seasonings)

You could also use chicken mince or shrimp or sausage chilli fry as a filling.

2 tbsp chopped onion

1 tbsp chopped spring onions

¼ tsp chilli powder

¼ tsp salt

⅓ tsp chaat masala (or any spice mix or masala mix of your choice)

1 tsp lime juice

1 tbsp oil

Hot pasta sauce or red chilli sauce

 

Potato Bhaji filling

1 large boiled, peeled, and chopped potato

2 tbsp chopped onions,

1 tbsp spring onions (optional)

1 chopped green chilli

1 tsp chopped garlic

½ tsp turmeric powder

½ tsp asafoetida

Chopped coriander

½ tsp chaat masala (optional)

½ tsp ground cumin(optional)

½ tsp sugar (optional)

Salt to taste

1 tbsp pure ghee

Pasta sauce

 

Salad-style filling:

1 tbsp chopped onions

1 tbsp chopped spring onions

2 tbsp deseeded and chopped tomatoes

½ tsp chopped green chilli

1 tbsp crumbled paneer

1 tbsp shredded cabbage

1 tbsp grated carrot

Chopped coriander

Hot pasta sauce or red chilli sauce

Salt

Mayonnaise

Procedure:

Filling 1:

Mix all the ingredients and adjust the taste with the salt and sauce.

Filling 2.

  1. Heat 1 tbsp oil, and add in the chopped onion. Sauté this for a minute or two.
  2. Then add the chawli, chilli powder, salt, chaat masala, and spring onions. Stir it all up.
  3. Finally, add the lime juice and immediately tun off the heat.

Filling 3:

  1. Heat two teaspoons of pure ghee.
  2. Add the chopped green chilli, turmeric powder, and asafoetida.
  3. Throw in the chopped onion. Sauté it for 1 – 2 minutes.
  4. Add the chopped garlic and stir everything for around half a minute.
  5. Add 1 more tsp of ghee and then throw in the chopped potato. Stir well for a minute.
  6. Season with sugar and salt,
  7. Finally, add the chopped coriander, give the filling a quick stir and turn off the heat.

Assembling the burritos

For the beans burrito, smear hot pasta sauce on a tortilla. Red chilli sauce too goes well with this filling. Spread the filling in the centre but over the top two-thirds of the tortilla. Then fold the lower third of the tortilla over the filling, and fold the left and right sides of the tortilla inwards, letting them overlap slightly to form a wrap.

For making a vegetarian burrito with the potato filling, we’ll smear some hot pasta sauce on a tortilla. Then repeat the same procedure as before for spreading the filling and folding the tortilla to make the burrito.

For the salad filling burrito, spread some mayonnaise all over a tortilla. Then spread the filling and fold the tortilla in the same way as for the earlier Mexican burritos.
