As we in India know, the Indian railways vegetable cutlets are a hot favourite on long distance trains. The recipe is an easy one. And well, today we\u2019re going to make equally crisp and tasty or even tastier vegetable cutlets in the Pat-a-Cake kitchen.<\/p>\n<p>What\u2019s more, today\u2019s recipe is a very flexible one\u2026.. You can change the combination of quick-cooking vegetables according to your taste\u2026\u2026. You could also change the shape, shape them by hand or use moulds\u2026\u2026 You could even change the mix of spices and make a subtle change in the flavour of the cutlets\u2026.. But\u2026 \u00a0today, I\u2019m going to show you how to make vegetable cutlets in a new way. In place of breadcrumbs as a second binding agent we\u2019ll use two special ingredients, both commonly found in Indian kitchens.<\/p>\n<p>Crisp on the outside and deliciously soft and moist inside, these cutlets are just bursting with flavour. You absolutely must make them at home\u2026.. You\u2019ll love the taste.<\/p>\n<p>And equally delicious are my <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2022\/11\/11\/easydeliciousbrinjalcutletsrecipe\/\">brinjal cutlets<\/a> and my quick and easy <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2021\/04\/17\/crispcornpattieswithcheese\/\">corn cutlets or patties.<\/a><\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/b1lwZMoaseY\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>\u00bd kg boiled & mashed potatoes<\/p>\n<p>\u00bd cup green peas, boiled<\/p>\n<p>\u00be cup chopped carrot<\/p>\n<p>\u00be cup chopped green capsicum<\/p>\n<p>\u00bd cup chopped cauliflower<\/p>\n<p>\u00bd cup chopped green beans<\/p>\n<p>\u00bc cup chopped beetroot<\/p>\n<p>3 green chillies, chopped<\/p>\n<p>\u00bd tsp hing<\/p>\n<p>\u00bd tsp turmeric powder<\/p>\n<p>1 tsp crushed garlic<\/p>\n<p>1 tsp crushed ginger<\/p>\n<p>1 tsp + \u00bd tsp salt<\/p>\n<p>2 tsp + 1 tsp sugar<\/p>\n<p>2 tsp coriander powder<\/p>\n<p>1 tsp ground cumin<\/p>\n<p>\u00bd tsp pepper powder<\/p>\n<p>1 tbsp amchur powder<\/p>\n<p>1 tsp chilli powder<\/p>\n<p>\u00bd cup thick pohe<\/p>\n<p>2 tbsp whole wheat flour<\/p>\n<p>\u00bd cup chopped coriander<\/p>\n<p>2 tbsp oil<\/p>\n<p>\u00a0<\/p>\n<p><em>Outer coating<\/em><\/p>\n<p>1 cup thick pohe<\/p>\n<p>\u00bc cup (4 tbsp) maida<\/p>\n<p>1 tbsp cornflour<\/p>\n<p>Approx. 6 tbsp water<\/p>\n<p>\u00a0<\/p>\n<p>Oil for deep frying<\/p>\n<p>\u00a0<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-917\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2023\/02\/Railways-Vegetable-Cutlet-Recipe.jpg?resize=500%2C400&ssl=1\" alt=\"Railways Vegetable Cutlet Recipe\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2023\/02\/Railways-Vegetable-Cutlet-Recipe.jpg?w=500&ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2023\/02\/Railways-Vegetable-Cutlet-Recipe.jpg?resize=300%2C240&ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Procedure<\/strong><\/h3>\n<h3><\/h3>\n<ol>\n<li>Heat 2 tbsp of oil in a pan on a medium flame. Add the green chillies and saut\u00e9 this for a few seconds.<\/li>\n<li>Add the hing, turmeric powder, and the crushed garlic and ginger, and saut\u00e9 this too for a few seconds.<\/li>\n<li>Now add in all the chopped vegetables except the beetroot \u2013 that is, the carrot, green capsicum, cauliflower, and green beans. Saut\u00e9 all of these for around 5 minutes. Don\u2019t let the vegetables burn. Add the chopped beetroot. Saut\u00e9 all the vegetables for 2 more minutes.<\/li>\n<li>Add the salt and the sugar. At this stage, the veggies will release a little water. Continue stir frying the vegetables for a couple of minutes till the released moisture evaporates.<\/li>\n<li>Next, add the spices beginning with the coriander powder followed by the ground cumin pepper powder, amchur powder, and the chilli powder. Mix the spices well with the vegetables.<\/li>\n<li>Then add in the boiled and mashed potato and mix this well with the rest of the vegetables. Lightly crush the boiled green peas and add these too to the vegetable mix.<\/li>\n<li>Mix in the ground pohe, and then the whole wheat flour.<\/li>\n<li>Turn off the heat and taste the mix. Adjust the taste by adding more salt, sugar, or chilli powder, if necessary.<\/li>\n<li>After letting the mixture cool a little, check its texture. It shouldn\u2019t stick to your fingers. But if it\u2019s a little sticky, mix in some more ground pohe and flour.<\/li>\n<li>Finally, mix in the chopped coriander and let the mixture cool completely.<\/li>\n<li>Shape cutlets with the mix. Grease your palms lightly with a little oil, if necessary, before shaping them. You could also use moulds to shape the cutlets.<\/li>\n<li>Make a medium thick slurry with the maida, cornflour, and water.<\/li>\n<li>Dip the cutlets into the slurry and roll them in the ground pohe. Then move them to the fridge for around 20 minutes to let them set.<\/li>\n<li>Deep fry the cutlets on a medium flame till they become crisp and nicely browned.
