Made in dhaba style, it will set your mouth watering. This quick okra masala recipe is one in which the lady&#8217;s fingers or bhendi don&#8217;t become slimy. Stir-fried with onions and a mix of zesty spices, it&#8217;s a lip-smacking vegetable with a mix of flavours.<\/p>\n<p>Bhendi masala fry is an easy-to-cook dish that goes well with either rice or roti. This lady&#8217;s finger masala dhaba style recipe doesn&#8217;t need any special ingredients but uses regular everyday spices and ingredients you normally have in your kitchen.<\/p>\n<p>As mentioned earlier, this is a dhaba style dish. So we won&#8217;t use a non-stick pan or vessel to make it as it needs to have that slightly burnt smoky flavour. Once you make and taste this mouth-watering dish, believe me, you&#8217;ll want to enjoy it again and again. Do check it out too.<\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/oorX2H2g-Yo\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>400g lady&#8217;s fingers (bhendi)<\/p>\n<p>1 tsp sour lime juice<\/p>\n<p>2 \u00bd + 1 tbsp oil<\/p>\n<p>5 green chillies, medium-size, chopped<\/p>\n<p>3 medium-size onions, chopped<\/p>\n<p>(Approx. 1 \u00bc cup)<\/p>\n<p>1 \u00bd tsp cumin seeds (jeera)<\/p>\n<p>\u00bd tsp asafoetida (hing)<\/p>\n<p>3 tbsp grated fresh coconut (optional)<\/p>\n<p>\u00bd tsp turmeric powder<\/p>\n<p>1 \u00bd&#8221; piece of ginger, crushed<\/p>\n<p>6 cloves garlic, crushed<\/p>\n<p>2 tsp coriander (dhania) powder<\/p>\n<p>\u00bd tsp garam masala<\/p>\n<p>2 tsp dry mango powder (amchur)<\/p>\n<p>(OR 1 tbsp tamarind extract)<\/p>\n<p>1 tsp chilli powder<\/p>\n<p>1 tsp salt<\/p>\n<p>1 tsp sugar<\/p>\n<p>\u00bc cup chopped coriander leaves<\/p>\n<p>&nbsp;<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-754\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2022\/07\/Ladys-finger-masala-dhaba-style.jpg?resize=500%2C400&#038;ssl=1\" alt=\"Lady's finger masala dhaba style\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2022\/07\/Ladys-finger-masala-dhaba-style.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2022\/07\/Ladys-finger-masala-dhaba-style.jpg?resize=300%2C240&amp;ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Procedure<\/strong><\/h3>\n<ol>\n<li>Wash and dry the lady&#8217;s fingers. Then chop off the top and the tip of each and cut them into two or three pieces each.<\/li>\n<li>Next, let&#8217;s heat 2 and \u00bd tbsp of oil in a wok or kadai and saut\u00e9 the chopped green chillies in it. Add the chopped lady&#8217;s fingers and toss this for a minute.<\/li>\n<li>Then add the lime juice to the vegetable and toss everything again. The oil and the lime juice will cut through the slime and prevent the lady&#8217;s finger pieces from becoming slimy.<\/li>\n<li>Continue saut\u00e9ing the bhendi on medium or medium-low heat for around 8 \u2013 10 minutes till it gets cooked and changes colour a little. Then remove it to a plate.<\/li>\n<li>To the same kadai, add 1 tbsp of oil and then add in the chopped onions. Saut\u00e9 these for around 3 minutes till they soften.<\/li>\n<li>Then create a space in the centre, and add the cumin seeds, hing, and grated coconut. Toast this lightly for around a minute and then mix everything.<\/li>\n<li>Next, add in the turmeric, the crushed ginger, and the crushed garlic. Mix everything and fry this for a minute or so.<\/li>\n<li>Now mix in the coriander powder, garam masala, amchur and the chilli powder. Mix everything again.<\/li>\n<li>Add in the chopped bhendi and carefully mix it with the rest of the ingredients.<\/li>\n<li>Add the salt and the sugar, mix the bhendi masala well and then taste it.
