Corn patties, corn cutlets, corn kebabs, whatever you call them, these crisp and tasty treats would also make a great party snack. I&#8217;ll show you how to make these with two different coatings. You could vary the mix of vegetables I&#8217;ve added and also replace the cheddar cheese with mozzarella cheese if you want.<\/p>\n<p>These corn patties could be served with any chutney of your choice or plain tomato sauce, but, believe me, they taste delicious on their own as well.<\/p>\n<p>If you&#8217;re interested in making delicious paneer patties, <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2021\/02\/20\/savourystarterspaneerpatties\/\">here&#8217;s the recipe<\/a>.<\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/-aKzdQJdkv4\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>1 cup sweet corn kernels, boiled and lightly crushed,<\/p>\n<p>\u00bd cup green peas, boiled and lightly crushed<\/p>\n<p>\u00bd cup finely cut carrot<\/p>\n<p>2 medium size onions<\/p>\n<p>3 medium size boiled potatoes<\/p>\n<p>4 green chillies, finely cut<\/p>\n<p>\u00bc cup chopped coriander<\/p>\n<p>\u2153 cup cheddar cheese cut into small cubes<\/p>\n<p>2 tbsp chopped cashew nuts (optional)<\/p>\n<p>3 slices of bread<\/p>\n<p>3 tbsp (approx.) rice flour (or cornflour)<\/p>\n<p>( + more for coating the patties)<\/p>\n<p>1 \u00bd tbsp cornflour<\/p>\n<p>1 \u00bd tbsp maida (all-purpose flour)<\/p>\n<p>Panko bread crumbs<\/p>\n<p>2 tsp ground cumin<\/p>\n<p>1 \u00bd tsp chaat masala<\/p>\n<p>1 \u00bd tsp Kitchen King Masala (or garam masala)<\/p>\n<p>1 tsp sugar<\/p>\n<p>\u00be tsp salt<\/p>\n<p>Juice of \u00bd sour lime<\/p>\n<p>2 tbsp oil + more for shallow frying<\/p>\n<p>&nbsp;<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-349\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2021\/04\/Corn-Cutlets-with-Cheese.jpg?resize=500%2C400&#038;ssl=1\" alt=\"corn cutlets with cheese\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2021\/04\/Corn-Cutlets-with-Cheese.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2021\/04\/Corn-Cutlets-with-Cheese.jpg?resize=300%2C240&amp;ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Process:<\/strong><\/h3>\n<h3><\/h3>\n<ol>\n<li>Heat around 2 tbsp oil. Saut\u00e9 the chopped chillies in it for a few seconds. Add the crushed corn kernels and saut\u00e9 these for 2 &#8211; 3 minutes to reduce their moisture. Throw in the carrots and green peas, saut\u00e9 some more, and finally add the chopped onions. Saut\u00e9 these for around a minute or two, only until the onions are slightly softened. Let the mixture cool to room temperature.<\/li>\n<li>Mix in all the other ingredients, except the cheese, and adding only 2 tbsp of the rice flour at first.<\/li>\n<li>Taste the mix and adjust for saltiness or add chilli powder to make it more pungent, if necessary.<\/li>\n<li>If the mix is slightly sticky, add the remaining rice flour, a tablespoon at a time.<\/li>\n<li>Divide the mix into 2&#8243; diameter balls. Form a cup out of each one, place two cubes of cheese inside and close the mouth to form a sphere again. Then flatten lightly and shape into a patty.<\/li>\n<li>Coat all the patties with rice flour.<\/li>\n<li>Make a slurry with the cornflour and maida. Dip a few of the corn cutlets in this slurry and then roll them in panko breadcrumbs.
