Today I&#8217;m going to show you how to make instant super soft poha idlis without the bother of overnight fermentation. Traditionally, you have to soak rice and dal for several hours, then grind them, and after that let the batter ferment overnight for another 8 to 10 hours before you can make idlis for breakfast. This quick recipe does away with all of that hassle and lets you make idlis from scratch, but within minutes.<\/p>\n<p>Please also check out my two earlier quick and easy breakfast recipes for i<a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2025\/10\/31\/howtomakeinstantwhitedhokla\/\">nstant white dhokla<\/a>, and <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2025\/11\/14\/howtomakewheatflourpancakes\/\">quick wheat flour pancakes<\/a>.<\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/cqq2xPdeHM8?si=8zthCQXSKnHWRcOu\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>Idlis<\/p>\n<p>\u00be cup thick pohe (grind coarsely)<\/p>\n<p>1 cup rava (regular)<\/p>\n<p>\u00be cup yogurt<\/p>\n<p>Salt to taste (3\/4 tsp)<\/p>\n<p>\u00be tsp Eno fruit salt + 1 tsp water (1\/3 tsp baking soda)<\/p>\n<p>\u00bd cup water, approximately<\/p>\n<p>&nbsp;<\/p>\n<p>Hotel-style chutney without coconut<\/p>\n<p>\u00bd cup roasted peanuts<\/p>\n<p>\u00bc cup roasted gram (chana)<\/p>\n<p>3 cloves garlic<\/p>\n<p>4 green chillies<\/p>\n<p>Coriander leaves, a handful<\/p>\n<p>Small ball tamarind \/ OR 1 \u00bd tbsp lemon juice<\/p>\n<p>\u00bd tsp salt, approximately<\/p>\n<p>&nbsp;<\/p>\n<p>Tadka<\/p>\n<p>2 tsp oil<\/p>\n<p>\u00bc tsp mustard seeds<\/p>\n<p>\u00bc tsp hing (asafoetida)<\/p>\n<p>Curry leaves<\/p>\n<p>Dried red chili pieces<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1557\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2026\/01\/Soft-and-fluffy-poha-idli.jpg?resize=500%2C400&#038;ssl=1\" alt=\"Soft and fluffy poha idli\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2026\/01\/Soft-and-fluffy-poha-idli.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2026\/01\/Soft-and-fluffy-poha-idli.jpg?resize=300%2C240&amp;ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Procedure<\/strong><\/h3>\n<p>Idlis<\/p>\n<ol>\n<li>Grind the poha coarsely in a grinder. Transfer to a bowl. Wash and drain.<\/li>\n<li>Wash the rava and drain. Add in the ground and washed poha, yogurt, and \u00bd cup water. Mix. Cover and keep aside for 20 minutes. (In the meanwhile, prepare the chutney.)<\/li>\n<li>Add more water if necessary to adjust the consistency to a thick dropping consistency. If it&#8217;s a little too loose, add a little more rava. Mix in salt to taste.<\/li>\n<li>Lightly grease the idli moulds. Add water to the steamer and bring it to a boil.<\/li>\n<li>Mix the Eno + water into the idli batter.<\/li>\n<li>Add the batter to the moulds.<\/li>\n<li>Steam the idlis for around 15 minutes or till done.<\/li>\n<li>Instead of idli moulds, you could also use a shallow plate or a cooker container \/ baking pan and make plate idlis. After unmoulding these idlis, cut them into wedges.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Chutney<\/p>\n<ol>\n<li>Mix all the ingredients in a grinder jar with a little water. Adjust the taste adding more tamarind, green chillies, or salt as needed.<\/li>\n<li>Heat the oil. Add the mustard seeds. When they stop spluttering, add the hing, curry leaves, and broken red chilli pieces.
