These are high fibre, high protein laddus and are low in fat. But the taste is amazing. I\u2019m going to show you the halwai style of making moong dal laddus with boora sugar.<\/p>\n<p>However, mine is a quicker version of the traditional recipe that involves soaking moong dal for a few hours or overnight. My recipe also includes a special ingredient that cuts down the amount of ghee needed to make the laddus. Scrub and wipe it with another kitchen towel to remove most of the moisture from it.<\/li>\n<li>Transfer the dal to a pan and dry roast it on medium heat with continuous stirring for around 4 minutes, and for 4 minutes more on low heat. By the now the dal will have a reddish-brown tinge to it, and the dal grains will be crisp. Don\u2019t over-roast the dal. Transfer it to a plate to cool.<\/li>\n<li>In the meantime, prepare the special ingredient \u2013 thickened milk. Prepare it by mixing the milk powder and milk. Keep it aside.<\/li>\n<li>When the dal has cooled down grind it to a fine flour in a mixer-grinder. Add this to the same pan in which you had roasted the moong dal, along with 2 tbsp of ghee.<\/li>\n<li>Roast the flour on low heat with constant stirring for around 5 minutes so that the flour is well roasted in the ghee.<\/li>\n<li>Now turn off the heat and add in the special ingredient, the thickened milk, in two parts, stirring well after each addition. Turn on the heat again and continue with the slow roasting on low heat for another 2-3 minutes. Add 2 more tablespoons of ghee and roast the mixture for a couple of minutes more. Then take the pan off the stove.<\/li>\n<li>Stir the pre-roasted and chopped almonds into the hot mixture. Also stir in the ground cardamom.<\/li>\n<li>After the mixture has cooled down a little but is still slightly hot, stir in the boora sugar. Break any soft lumps in the boora as you mix it into the ladoo mixture.<\/li>\n<li>Moong dal ladoos should be shaped when the mixture is still warm. (After it cools completely, the ladoos won\u2019t form.) If the mixture feels too dry, add in 2 \u2013 3 tbsp of ghee as needed for moulding it into laddus. And if the mixture cools down before you can shape all the ladoos, heat it again on low heat for 2-3 minutes.<\/li>\n<li>After the laddus have cooled, store them in an airtight container for around 8 days at room temperature and then in the fridge.<\/li>\n<\/ol>\n<p>Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Easy Moong Dal Ladoo Recipe With Diwali just around the corner, let me show you how to make a quick and easy and nutritious moong dal laddu recipe.
