This is an authentic vindaloo recipe made with mixed vegetables and the famous Goan vindaloo masala. For those of you interested in knowing more about this recipe, it was brought to Goa by the Portuguese over five centuries ago. And the name vindaloo is derived from two of its principal ingredients \u2013 vinho that means wine in Portuguese, and alho, the Portuguese word for garlic. The Goans replaced the wine or wine vinegar with palm vinegar and threw in some Indian spices to give the dish an Indian touch.<br \/>\nUnlike chicken, pork, or fish, with which vindaloo curries are usually made, vegetables don&#8217;t add a special flavour of their own to the curry. Which is why my recipe includes the use of seasoning cubes. I have used Maggi Magic Vegetarian Cubes, but you could use any bouillon cubes of your choice.<br \/>\nAnother delicious vegetarian curry you could try out is my creamy <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2024\/07\/19\/goanvegetablecaldinrecipe\/\">vegetable caldine<\/a>.<\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/jM2UXpZ8kaY?si=6zEniOFGvaPXVG_r\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>Vindaloo masala \/paste<br \/>\n3 Kashmiri chillies<br \/>\n2 bedki chillies<br \/>\n1 tsp cumin seeds<br \/>\n\u00bc tsp mustard seeds<br \/>\n15 peppercorns<br \/>\n5 cloves<br \/>\n1 inch piece cinnamon<br \/>\n3 green cardamoms<br \/>\n5 large cloves garlic<br \/>\n1 inch piece ginger<br \/>\n1 large tomato<\/p>\n<p>Curry<br \/>\n2 tbsp oil<br \/>\n1 large onion<br \/>\n\u00bc tsp turmeric powder<br \/>\n50g green beans, chopped<br \/>\n150g cauliflower, cut into florets<br \/>\n150g small potatoes, peeled.<br \/>\n50g paneer, chopped<br \/>\n2 Maggi Magic Vegetarian Cubes<br \/>\n1 tsp chilli powder (optional)<br \/>\n2 tbsp vinegar<br \/>\n2 tsp sugar<br \/>\nSalt to taste<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1356\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2025\/01\/Mixed-Vegetable-Recipe-Goan-Style.jpg?resize=500%2C400&#038;ssl=1\" alt=\"Mixed Vegetable Recipe Goan Style\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2025\/01\/Mixed-Vegetable-Recipe-Goan-Style.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2025\/01\/Mixed-Vegetable-Recipe-Goan-Style.jpg?resize=300%2C240&amp;ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Procedure<\/strong><\/h3>\n<p>1. We&#8217;ll begin by de-seeding the chillies and soaking them in hot water for 1 hour.<br \/>\n2. After that, let&#8217;s mix all the ingredients for the vindaloo paste and grind these to a smooth paste with a little water.<br \/>\n3. Heat the oil. Add the chopped onion. Fry till brown. Add the turmeric powder.<br \/>\n4. Add \u00bd cup water, and then add green beans. Cook on low heat for around 3-4 minutes. Then add the cauliflower florets and peeled small potatoes. Add a little more water, cover the vessel, and continue cooking the vegetables for 6 to 7 minutes.<br \/>\n5. Add the paneer, and the vindaloo paste. Mix. Add the rinsing of the grinder jar. Cook the curry for 2 more minutes till the vegetables are fully cooked.<br \/>\n6. Add the Maggi Magic Cubes. Stir, cover and cook for a minute longer. Add the vinegar, sugar, and salt to taste.<br \/>\n7. Taste the vegetable vindaloo curry and adjust the taste if necessary. Turn off the heat.<br \/>\n8.
