This Goan brinjal green curry is made with coconut milk. It&#8217;s one of the many tasty Goan curries made with the Goan green masala. The main ingredient in the masala is coriander leaves. The creaminess comes form the coconut milk. It&#8217;s an easy and quick curry to make. You could use any kind of small brinjals in this recipe. I have used the purple variety. Or my <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2022\/04\/30\/deliciousprawnandladysfingercurry\/\">lady&#8217;s finger and prawn caldin recipe.<\/a><\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/jLMaL_ZpnOY?si=sHpmiML4I6sHQmZl\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>350g small brinjals<\/p>\n<p>1 tsp salt<\/p>\n<p>Water<\/p>\n<p>&nbsp;<\/p>\n<p><em>Coconut milk<\/em><\/p>\n<p>\u2158 cup grated coconut (80g)<\/p>\n<p>Extract \u00be cup thick coconut milk<\/p>\n<p>+ \u00bd to \u00be cup thin coconut milk<\/p>\n<p>&nbsp;<\/p>\n<p><em>Green masala<\/em><\/p>\n<p>1 small bunch coriander leaves (1\/2 cup chopped leaves and stems)<\/p>\n<p>2 tbsp mint leaves (optional)<\/p>\n<p>3 to 4 green chillies<\/p>\n<p>1 tbsp coriander seeds<\/p>\n<p>1 tsp cumin seeds<\/p>\n<p>15 peppercorns<\/p>\n<p>1 inch piece of cinnamon<\/p>\n<p>\u00bd tsp turmeric powder<\/p>\n<p>1 tsp kitchen king masala or garam masala (optional)<\/p>\n<p>8 cloves garlic<\/p>\n<p>1 inch piece of ginger sliced<\/p>\n<p>2 tsp sugar<\/p>\n<p>\u00bd tsp salt<\/p>\n<p>2 tbsp vinegar (OR a small marble size ball of tamarind OR 1 \u00bd\u00a0 tbsp lime juice)<\/p>\n<p>&nbsp;<\/p>\n<p><em>Curry<\/em><\/p>\n<p>2 tbsp oil<\/p>\n<p>1 medium size onion finely chopped<\/p>\n<p>1 tsp cumin seeds<\/p>\n<p>Salt to taste<\/p>\n<p>Chopped coriander<\/p>\n<p>&nbsp;<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1270\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2024\/09\/Brinjal-green-masala-curry.jpg?resize=500%2C400&#038;ssl=1\" alt=\"Brinjal green masala curry\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2024\/09\/Brinjal-green-masala-curry.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2024\/09\/Brinjal-green-masala-curry.jpg?resize=300%2C240&amp;ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Procedure<\/strong><\/h3>\n<h3><\/h3>\n<ol>\n<li>Extract the coconut milk.<\/li>\n<li>Grind the green masala to a thin paste using a little water.<\/li>\n<li>Wash the brinjals and cut off the stems. Chop each brinjal into 4 pieces.<\/li>\n<li>Add salt to 2 cups of water and add the chopped pieces of brinjal to this salt water.<\/li>\n<li>Chop the onion.<\/li>\n<li>Heat the oil on medium heat. Add the chopped onion and saut\u00e9 till it just starts turning brown.<\/li>\n<li>Throw in the cumin seeds and saut\u00e9 them for a few seconds.<\/li>\n<li>Remove the brinjal pieces from the salt water. Add them to the fried onions. Saut\u00e9 for a couple of minutes.<\/li>\n<li>Add the thin coconut milk and a little water. When the liquid starts boiling, cover the pot and cook the brinjals on low heat for 7 \u2013 8 minutes or till almost done.<\/li>\n<li>Add in the green masala. Stir everything. Add a little water if necessary. Increase the heat to medium. Bring the curry to a boil and lower the heat again.<\/li>\n<li>Add the thick coconut milk and \u00bd tsp salt, cook the brinjals for 2 minutes or till done.<\/li>\n<li>Adjust the taste for salt, sugar, or vinegar.<\/li>\n<li>Garnish with chopped coriander.<\/li>\n<\/ol>\n<p>Enjoy!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Goan Brinjal Green Curry with Coconut Milk Here&#8217;s a creamy, delicious Goan curry \u2013 a brinjal green masala curry.
