Let&#8217;s make some colourful Tiranga Pulao or Tricolour rice. To make the three pulaos in the colours of the national flag, we won&#8217;t use any food colours. We&#8217;ll just make three delicious but quick to make pulaos, the first one an orange carrot pulao, the second a green chutney pulao, and the third a white paneer pulao.<\/p>\n<p>This tiranga pulao tastes really awesome, but each of these three pulaos too taste delicious and can be enjoyed individually as well.<\/p>\n<p>If you want to try a non-vegetarian pulao my <a href=\"https:\/\/veenapatwardhan.com\/pat-a-cake\/2022\/06\/10\/quickandeasyprawnpulaorecipe\/\">Goan prawn pulao<\/a> would be a splendid choice.<\/p>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/hZj9iRw9Eqs?si=4FgtPQ3YLl15Wpge\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p>1 \u00bd cup Basmati rice<\/p>\n<p>Around 9 cups water<\/p>\n<p>1 tsp salt<\/p>\n<p>1 tsp oil<\/p>\n<p>Cook the rice till al dente using the draining method.<\/p>\n<p>&nbsp;<\/p>\n<p><em>Common Ingredients<\/em><\/p>\n<p>\u2153 cooked rice<\/p>\n<p>1 tbsp pure ghee \/ oil<\/p>\n<p>4 cloves<\/p>\n<p>1 inch piece cinnamon<\/p>\n<p>3 green cardamoms<\/p>\n<p>\u00bc cup chopped onion<\/p>\n<p>\u00bd tsp cumin seeds<\/p>\n<p>1 tsp grated ginger <em>(\u00bd tsp for paneer pulao)<\/em><\/p>\n<p>1 tsp grated garlic <em>(\u00bd tsp for paneer pulao)<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><em>Additional Ingredients<\/em><\/p>\n<p><em>Carrot Pulao<\/em><\/p>\n<p>\u00bd &#8211; \u00be cup grated carrot<\/p>\n<p>1 tbsp water<\/p>\n<p>1 tsp chili powder<\/p>\n<p>3 tbsp tomato sauce<\/p>\n<p>1 tbsp red chilli sauce<\/p>\n<p>Salt to taste<\/p>\n<p>12 fried, chopped prawns (Optional)<\/p>\n<p>&nbsp;<\/p>\n<p>To prepare prawns:<\/p>\n<p>12 shelled, washed medium-size prawns<\/p>\n<p>\u215b tsp salt<\/p>\n<p>\u00bc tsp turmeric<\/p>\n<p>\u00bc tsp chilli powder<\/p>\n<p>\u00bd tsp lime juice<\/p>\n<p>2 \u2013 3 tsp oil<\/p>\n<p>&nbsp;<\/p>\n<p><em>Chutney Pulao<\/em><\/p>\n<p>6 tbsp coriander-mint chutney<\/p>\n<p>Salt to taste<\/p>\n<p>&nbsp;<\/p>\n<p><em>Paneer Pulao<\/em><\/p>\n<p>2 chopped green chillies<\/p>\n<p>1 \u00bd tbsp chopped cashew nuts<\/p>\n<p>1 \u00bd tbsp raisins<\/p>\n<p>\u00be cup grated paneer<\/p>\n<p>1 \u2013 1 \u00bd tsp sugar<\/p>\n<p>Salt to taste<\/p>\n<p>&nbsp;<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-1135\" src=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2024\/01\/Tricolour-Rice-Recipe.jpg?resize=500%2C400&#038;ssl=1\" alt=\"Tricolour Rice Recipe\" width=\"500\" height=\"400\" srcset=\"https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2024\/01\/Tricolour-Rice-Recipe.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/veenapatwardhan.com\/pat-a-cake\/wp-content\/uploads\/2024\/01\/Tricolour-Rice-Recipe.jpg?resize=300%2C240&amp;ssl=1 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<h3><strong>Procedure<\/strong><\/h3>\n<p><em>Boiling the rice:<\/em><\/p>\n<ol>\n<li>Wash the rice in plenty of water and then soak it in water for around 20 minutes.<\/li>\n<li>Drain the rice and add it to 9 cups of boiling water along with the salt and oil.<\/li>\n<li>When the rice is al dente (slightly undercooked), turn off the heat and drain the water from the rice.<\/li>\n<li>Spread the cooked rice on a tray to cool.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>Preparing the prawns:<\/em><\/p>\n<ol>\n<li>Clean and de-vein the prawns and then wash them.<\/li>\n<li>Apply the salt, turmeric powder, chilli powder, and lime juice to them and let them marinate for around 15 minutes.<\/li>\n<li>Then fry the prawns on medium heat in 2-3 tsp oil, frying them for around 2 minutes on each side.<\/li>\n<li>When they have cooled, chop the fried prawns roughly into small pieces.<\/li>\n<\/ol>\n<p><em>Carrot Pulao<\/em><\/p>\n<ol>\n<li>Heat the ghee or oil in a pan on medium heat and then throw in the cloves, cinnamon, and green cardamoms. Saut\u00e9 these for a minute.<\/li>\n<li>Then add in the chopped onion and fry this till it browns.<\/li>\n<li>Add in the cumin seeds, fry them for a minute, and then mix in the crushed ginger and garlic and fry this for a few seconds.<\/li>\n<li>Next, add the carrot along with the water and mix well. Let the carrot cook for a minute.<\/li>\n<li>Add the chilli powder. Mix the tomato sauce and red chilli sauce and stir this too into the other ingredients.<\/li>\n<li>If you want to make this a non-veg pulao, stir in the fried and chopped prawns. If you want to keep it vegetarian, you could add an extra \u00bc cup of grated carrot to it.<\/li>\n<li>Add the rice and mix it gently with the other ingredients to avoid breaking the rice grains.<\/li>\n<li>Finally, add salt to taste.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>Chutney Pulao<\/em><\/p>\n<ol>\n<li>Follow steps 1 to 3 as given for the carrot pulao.<\/li>\n<li>Then stir in the coriander mint chutney. Gently saut\u00e9 the pulao for a minute.<\/li>\n<li>\u00a0Finally add salt to taste.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>Paneer Pulao<\/em><\/p>\n<ol>\n<li>Follow steps 1 and 2 as given for the carrot pulao.<\/li>\n<li>Add the chopped green chillies and cumin seeds, and fry everything for a minute.<\/li>\n<li>Then move the entire mix to one side and add in the cashew nuts and raisins. Fry these for a minute adding a little more ghee if necessary, and then mix all the ingredients in the pan.<\/li>\n<li>next, add in the crushed ginger and garlic. Saut\u00e9 these for a minute.<\/li>\n<li>Mix in the paneer, and then add the rice to the other ingredients, mixing everything gently. Adjust the taste for salt and then mix in the sugar.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>Assembling the Tiranga Pulao \/ Triicolour Rice<\/em><\/p>\n<p>You could do this in two ways in lightly greased moulds.<\/p>\n<ol>\n<li>Line the bottom of the greased mould with parchment paper to ensure you&#8217;ll be able to demould the tiranga pulao afterwards. First press down a layer of the carrot pulao, followed by a layer of the paneer pulao on top of this and finally a layer of the chutney pulao. Press the rice down gently. Upturn the bowl on a plate and demould the tricolour rice. Add a sprig of mint or pudina on top as a garnish.<\/li>\n<li>Or you could arrange the three layers side by side in a horizontal design in a greased mould with the paneer pulao in the middle between the carrot pulao and the chutney pulao.
